Guailu Fried Rice is one of the most popular snacks in Guiyang, capital of Southwest China's Guizhou province.

The word "guailu" in Guiyang's dialect refers to a strange and unclear state. In 2020, the production technology of Guailu Fried Rice was selected as an intangible cultural heritage of Guiyang.

Guailu Fried Rice boasts a wide range of ingredients, with a spicy and salty taste primarily featuring ciba chili – chopped red chili mixed with ginger and garlic. The various blended ingredients include both meat and vegetables, such as dried sausage, green beans and pickled long beans, showcasing an impressive fusion of diverse foods.

Although adjustments to the ingredients can be made based on individual preferences, several condiments such as fish mint, preserved meat or sausage, green beans and vegetables are indispensable.
